Cana Winery draws from a diverse mosaic of vineyards from the Galilee and the upper Galilee wine regions, each offering a distinctive terroir. With varied altitudes, diverse soils (basalt, limestone, clay), and a cool microclimate with cold nights, these vineyards yield complex, concentrated, and highly aromatic grapes. Together, they form the foundation for Cana’s refined, balanced, and deeply expressive blends- the hallmark of its flagship wines.
The Vineyards

Shifon Vineyard
Situated on the northern slopes of the Golan Heights at approximately 850 meters above sea level, Shifon Vineyard grows in well-drained basaltic soil under a relatively cool climate. It is planted with red varieties such as Cabernet Sauvignon, Merlot, and Syrah. The grapes develop with rich structure and fresh acidity—ideal for producing layered, age-worthy wines.

Galilee
In the Galilee, wine speaks in a human voice—warm, inviting, and quietly complex. The climate here is relatively warm, with changing humidity; the soils are largely limestone, intertwined with alluvial valleys that add generosity and vitality to the fruit. It is a terroir that naturally seeks balance between sun and stone, softness and tension.
And in the story of Cana, the spiritual map matters. Nazareth, Cana of Galilee, Nain, Sepphoris, Magdala, Tiberias, the Sea of Galilee, and the Land of Gennesaret—names that resonate, and form a corridor of walking, water, and welcome. Cana reminds us that a great moment can begin in simplicity: a table, a vessel, and a heart ready for change.
The local landscape is built of valleys and hills—Tabor’s slopes, the Tabor Stream, and the Jezreel Valley—lines that shape grapes with character, and produce wines that are generous yet disciplined, bright with fruit, and grounded in a deep faith in people and place.
From within this landscape, we choose with care. We work alongside growers who share our values of love and faith, tending the vines with patience, humility, and trust. From these vineyards, fruit ripens gently and with purpose, allowing each wine to reflect its place with clarity, grace, and meaning.

From Vine To Wine

Upper Galilee
In the Upper Galilee we harvest more than grapes—we harvest altitude. This is a cool, temperate Mediterranean climate that can be very rainy and, at times, even snowy. Such conditions allow slow ripening, naturally bright acidity, and a frame that can age with grace. The soils—terra rossa over limestone—offer excellent drainage and a mineral backbone that feels both precise and enduring.
The Upper Galilee is also a landscape of layered stories. Close by are names etched into the New Testament: Capernaum, Bethsaida, Chorazin—stations of travel, and faith. They are not merely points on a map, but reminders that this region has long carried people, prayers, and journeys.
Here the scenery is built of ridgelines, forests, plateaus, and slopes: the Dalton Plateau, the high hills above the valleys, and vineyards that cool at night and polish the day, wines that are focused, rich, and deep, with a long, steady finish. Wines of elevation, made quietly, that speak the truth of their land.

Elkosh Vineyard
Elkosh Vineyard spans the western slopes of the Upper Galilee at about 750 meters above sea level. With shallow, rocky soil and exposure to cooling maritime winds, this site is planted with Mediterranean varieties including Syrah, Mourvèdre, and Carignan. The grapes exhibit intense concentration, refined aromatic complexity, and subtle minerality.
